Pescespada alla Ragusana:
Breaded swordfish fried in olive oil, lemon, white wine, garlic, vegetable bouillon, parsley. Served with boiled potatoes
Saltimbocca alla romana:
Thinley sliced fillet of veal lightly coated with egg and breadcrumbs fried in butter, served with parma ham, sage, white wine sauce and veal stock. Served with rosemary-potatoes
